I am interesting instrumental metal/rock too.
I strongly recommend Anamnez. For some reason they don’t position themselves as anything instrumental, but they really are instrumental, and one of the best in this business.

Plini - very talented guitarist, on PA he's labelled jazz-rock fusion, there is a little bit of that in his music. Widek. I've listened to Journey to the Stars and can't get enough of it.

Karma To Burn immediately comes to mind. They did one album with a vocalist, forced on them by a record company. They also numbered their songs instead of naming them.
